Raspberry simple syrup brings all the tangy fresh raspberry flavour without any of the pesky little seeds! Add it to your favourite drinks to bring a natural raspberry taste and colour.

Frozen or fresh raspberries
You can use frozen raspberries or fresh if you’ve got some spare! I grow raspberries in the summer and autumn but just enough for snacking unfortunately, not syrup amounts so I always use frozen for this recipe. They’ll simmer in water, steeping in all their flavour and colour. There’s a lot of sugar added because that’s what makes this a simple syrup so it is super sweet, but a little lemon adds brightness. Use this syrup to flavour drinks like mocktails and cocktails.

How to make it
- In a medium saucepan add all the ingredients and bring to a simmer for about 15 minutes.

- Turn off the heat and let the mixture cool completely. This extra steeping step brings out as much raspberry flavour as possible.

- Strain the mixture through a fine-mesh strainer. If you want a really clear liquid, don’t push down too much on the pulp.
Storing
Store it in a clean, sealed jar or container. This lasts around 2 weeks in the fridge. If you want to keep it longer, you can freeze it and a handy trick is to pour it into ice cube containers so it freezers in individual portion sizes! Ready to add to your next drink.


Raspberry Simple Syrup

- 240 g water
- 200 g granulated sugar
- 190 g raspberries fresh or frozen
- 1/2 Tbsp lemon juice

In a small saucepan over medium heat, combine the raspberries, sugar, water, and lemon juice. Bring the mixture to a simmer, stirring as the sugar dissolves.

Once the mixture starts simmering, lower the heat right down. Let it simmer for 10 minutes, stirring occasionally.

Balance a fine mesh strainer over the top of a bowl and tip in the raspberry mixture. Let it drain completely. Avoid pressing down on the raspberry pulp if you want a more clear liquid.

Let the syrup cool down to room temperature, then pour it into a clean glass jar or another airtight container.
Fresh fruit syrup like this can be stored in the refrigerator in a sealed container for up to 2 weeks. For long-term storage, the syrup can be frozen for up to 3 months.
